Roast chickens used to terrify the heck out of me (and I overcooked every one I tried). I feel like I finally have a hang of it and this is the recipe I have been making this year! I love a roast chicken for meal prep and also to make a bone broth with the bones for a nourishing soup for the rest of the week. You definitely do not need to add the butter....but its so much tastier with it.
